Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shoulders
Release gelatin and flavor as they simmer, giving the broth body and a rich meaty taste.
Egg whites
Bind to impurities as they heat, so straining clears the soup to a bright, clean appearance.
Pale sherry
Adds aromatic acidity and a dry, fragrant finish to the finished soup.

The step that matters

Clearing the soup with egg whites. Beaten whites must be whisked into the soup and heated gently so they coagulate and trap cloudy particles. Boiling too hard or skipping the straining step leaves the broth murky.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, egg, sherry):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. White pepperthe original

Fit is the average pairing score against veal, egg, sherry. Candidates are from the same food group and used in at least 100 recipes.
