What each ingredient does

Rice
Forms the bulk of the dish and absorbs the broth and ghee as it softens.
Lentils
Add protein-rich body and a firm, earthy texture that holds up against the soft rice.
Onions
Browning in ghee builds sweetness and deep savoury flavour.
Ghee
Adds fat and rich flavour, carrying the spices and coating the grains.
Yogurt or milk
Stewed briefly in the ghee to add creaminess and a mild tang.

The step that matters

Browning the onions. Onions need to be fried until deeply browned, not just softened, because the Maillard browning and caramelisation create most of the dish's savoury sweetness. Pale onions leave the dish flat.

Swap the onion
