Beefsteak and Pigeon Pie

Ingredients

Directions

Prepare the gravy and filling

  1. Make a strong gravy with the beef, adding scraggly parts of the steak and pigeons.

  2. Heat ghee and fry the curry onions until soft.

  3. Dredge the steak and pigeon pieces in flour, then add to the onions and fry briefly.

  4. Season with salt, pepper, sweet herbs, lime rind, and half the beef gravy.

  5. Simmer gently on low heat until the meat is tender, then let it cool.

Assemble and bake

  1. Add the remaining gravy and lime juice, then transfer to a pastry-lined dish.

  2. Cover with pastry, seal, and bake until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat and rich flavour for the filling.
Beef
Supplies the body of the strong gravy that moistens the filling.
Flour
Dusts the meat so it browns and helps thicken the gravy.
Curry onions
Soften into the base, adding sweetness and savoury depth.
Ghee
Adds fat for frying the onions and meat, carrying flavour and browning.
Lime juice
Adds acidity that brightens the rich meat and gravy.

The step that matters

Simmer gently until the meat is tender. Low, gentle heat breaks down connective tissue slowly, making the meat tender. Boiling hard toughens muscle fibres and can leave the filling dry or stringy.

Swap the lime

How well each one fits the dish's main ingredients (beef, onion, ghee, flour, pepper):

  1. Limethe original
  2. Avocadofits about as well
  3. Mangofits less well
  4. Coconutfits less well

Fit is the average pairing score against beef, onion, ghee, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
