What each ingredient does

Strawberries
Provide the fruit, flavor and pulp that the jam is made from.
Sugar
Sweetens the jam and, as it concentrates during boiling, helps it thicken and keep.

The step that matters

Boil for 40 minutes to 1 hour. The jam thickens as water evaporates and the sugar and fruit concentrate. Boiling too briefly leaves it runny and more prone to spoiling, while boiling too long can make it dark and overly stiff.
