Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bones
Release collagen, gelatin and flavour into the water during long simmering.
Onion
Adds savoury aroma and depth of flavour to the broth.
Carrot
Adds subtle sweetness and aroma to the broth.

The step that matters

Simmer until the goodness has been extracted. Bringing the liquid to a boil and then holding it at a gentle simmer keeps the broth clear. A hard boil emulsifies fat into the liquid and makes it cloudy, so keep the surface barely moving.

Swap the onion

How well each one fits the dish's main ingredients (clove, carrot, sugar):

  1. Parsnipfits better
  2. Turnipfits better
  3. Capsicumfits better
  4. Onionthe original

Fit is the average pairing score against clove, carrot, sugar. Candidates are from the same food group and used in at least 100 recipes.
