To Boil Fish

Ingredients

Directions

Prepare the fish

  1. Scrape off the scales if the fish has them.

  2. Remove the eyes if the fish is whole.

  3. Cut off the fins and wash them. Save the fins.

  4. Remove the insides.

  5. Wash the fish in cold water and set it aside.

Poach and serve

  1. In a fish kettle or saucepan, combine the hot water, vinegar, salt, peppercorns, and fins.

  2. Once the mixture is hot, gently place the fish in the pot and cook it slowly.

  3. Check for doneness with a skewer after a few minutes; if the flesh separates easily, it's done.

  4. Carefully remove the fish to prevent it from falling apart and losing flavor.

  5. Serve on a very hot dish.

What each ingredient does

Fish
Is the main ingredient; its flesh cooks gently in the hot liquid and flakes when done.
Vinegar
Adds a light acidity to the poaching liquid, brightening the mild flavour of the fish.
Peppercorns
Infuse the poaching liquid with a mild, aromatic peppery flavour.

The step that matters

Poach slowly and check with a skewer. Gentle heat keeps the proteins tender so the flesh stays moist and in large pieces. Boiling hard toughens the fish and makes it break apart, so check doneness early and lift it out promptly.
