What each ingredient does

Lentils
Provide the main body of the stew as they soften and thicken the liquid.
Onions
Cook whole until tender, becoming a soft centerpiece that holds its shape.
Carrots
Add sweetness and firm texture that holds up after boiling.
Turnips
Add a mild, slightly sweet flavor and firm pieces that keep their shape.
Dripping
Adds fat for richer flavor and a smoother mouthfeel.

The step that matters

Simmer the lentils until soft. Lentils need enough time in simmering liquid to fully soften. Stopping early leaves them firm and grainy, and the stew won't thicken properly.
