What each ingredient does

Marrow
Provides the main bulk and mild flesh that becomes tender when steamed.
Dripping
Adds fat and richness to the dish.

The step that matters

Steaming until tender. Steaming for too short a time leaves the flesh firm and watery-tasting, while the flesh softens fully only once its starch and cell walls have broken down with enough heat and time. Check for tenderness with a knife rather than relying on the minimum time.

Swap the sage

How well each one fits the dish's main ingredients (meat, bread, flour, pepper):

  1. Turmericfits better
  2. Marjoramfits about as well
  3. Parsleyfits about as well
  4. Sagethe original

Fit is the average pairing score against meat, bread, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
