What each ingredient does

Red cabbage
Forms the main body of the dish and softens into tender strands as it stews.
Ham
Adds savoury, salty flavour that seasons the cabbage as it cooks.
Butter
Adds richness and a silky mouthfeel to the stewed cabbage.
Stock or broth
Provides the cooking liquid that softens the cabbage and carries its flavour.
Vinegar
Adds acidity that brightens the flavour and helps the cabbage keep its colour.
Pounded sugar
Balances the sharpness of the vinegar with a touch of sweetness.

The step that matters

Stir over the fire until nearly all the liquid is dried away. Reducing the liquid concentrates the flavours and glazes the cabbage. Stopping too early leaves it watery, while over-reducing can scorch the sugar and butter on the base of the pan.

Swap the cabbage

How well each one fits the dish's main ingredients (ham, butter, vinegar, pepper, sugar):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits about as well
  4. Cabbagethe original

Fit is the average pairing score against ham, butter, vinegar, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
