Cheese, Toasted, or Welsh Rare-bit

Ingredients

Directions

  1. Cut the bread into slices about ½ inch thick and remove the crust.

  2. Toast the bread slightly without hardening or burning it, then spread with butter.

  3. Cut cheese into slices slightly smaller than the bread and place on the toasted bread.

  4. Melt the cheese in a cheese toaster, ensuring it does not burn.

  5. Spread a little mustard and season with pepper on top of the melted cheese.

  6. Serve immediately on hot plates with additional toast, mustard, pepper, and salt.
