What each ingredient does

Morello cherries
Supply the fruit and its sour flavour, which the sugar balances.
Sugar
Sweetens the fruit and, dissolved into syrup, helps preserve it.

The step that matters

Boil the cherries again for 10 minutes, skimming as necessary. Boiling in sugar syrup concentrates the syrup, and sugar is what preserves the fruit. Skimming removes the scum that rises, keeping the syrup clear and the preserve clean-tasting.
