What each ingredient does

Ground coffee
Provides the flavour and aroma that the boiling water extracts during infusion.
Boiling water
Extracts soluble flavour compounds from the grounds to make the brew.

The step that matters

Pour the boiling water gradually over the coffee. Pouring slowly lets the water wet all the grounds evenly, so extraction is uniform and the coffee tastes balanced rather than weak in some parts and harsh in others.
