Ingredients

Directions

Make the gravy

  1. Cut the beef into small pieces and place it in a saucepan with the cold water.

  2. Add the shallot, salt, and pepper.

  3. Simmer gently for 3 hours, ensuring it does not boil fast.

  4. Mix the arrowroot with a little cold water and pour it into the gravy, stirring continuously.

  5. Add the Harvey's sauce and let it come to a boil.

Strain and serve

  1. Strain the gravy into a tureen and serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Releases flavour and body into the water during long, gentle simmering.
Arrowroot
Thickens the liquid as it heats, giving the gravy a smooth body.
Harvey's sauce or mushroom ketchup
Adds savoury, umami depth and a rich aroma to the finished gravy.

The step that matters

Simmer gently, do not boil fast. A fast boil toughens meat proteins and can cloud the gravy, while gentle simmering extracts flavour slowly and keeps the liquid clear.

Swap the arrowroot

How well each one fits the dish's main ingredients (beef, shallot, pepper, sauce):

  1. Chivefits better
