What each ingredient does

Loose tea
Supplies the flavour and aroma compounds that dissolve into the water during steeping.
Boiling water
Extracts flavour from the tea leaves and heats the pot before brewing.

The step that matters

Steep for the right time. Tannins and other bitter compounds keep leaching out of the leaves as they steep. Steeping too long makes the tea harsh and astringent, while too short leaves it weak and thin.
