Veal, Fillet of

Ingredients

Directions

Prepare the veal

  1. Flatten the veal fillet.

  2. Brush the flattened fillet with the yolk of an egg.

  3. Dip the fillet into breadcrumbs mixed with minced herbs.

  4. Season the fillet with pepper, salt, and grated nutmeg.

  5. Fold the cutlet in a piece of buttered paper.

Make the bechamel filling

  1. For the bechamel version, cut out the middle of the fillet, leaving a margin for slicing.

  2. Mince the removed meat.

  3. Mix the minced meat with a little forcemeat and enough bechamel to achieve a proper consistency.

  4. Fill the cavity with the minced mixture.

Cook and serve

  1. Broil the folded cutlet for 15 to 18 minutes.

  2. Warm the veal in the oven for about an hour, basting well to keep it moist.

  3. Sprinkle the cavity with breadcrumbs.

  4. Drizzle clarified butter over the cavity.

  5. Return the dish to the oven for 5 minutes to brown.

  6. Pour bechamel around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal fillet
Forms the main body of the dish, cooking to tender, moist slices.
Bechamel sauce
Adds moisture and creamy richness to the filling and surrounding sauce.
Bread crumbs
Form a crisp, golden coating that browns in the oven.
Clarified butter
Adds fat that promotes browning and a rich flavor on the cavity crust.

The step that matters

Basting the veal while it warms. Veal is lean and dries out over long oven time, so regular basting with its juices helps keep the meat moist and tender.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, sauce, bread, butter, pepper):

  1. Parsleyfits better
