Corn Pone

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the dry meal with water until smooth and lump-free.

  2. Set the mixture in a warm place for several hours until it swells.

  3. Turn the dough into a well-oiled deep round dish.

  4. Smooth the top with wet hands and place in a preheated oven at 400°F (200°C).

  5. After it begins to brown, reduce the heat to 350°F (175°C) and bake for 2-3 hours.

  6. Ensure the top and bottom do not burn.

  7. For reheating, cut into thick slices, dip in cold water, and steam or heat in the oven.
