Tapioca Pudding

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

Prepare the tapioca

  1. Soak the tapioca in cold water for 2 hours, or longer if in large lumps.

  2. Drain the tapioca thoroughly and pour the cold milk over it.

  3. Warm the mixture slowly on the back of the stove, stirring occasionally.

Make the custard

  1. An hour and a half before dinner, beat the yolks with the sugar and beat the whites separately.

  2. Stir the yolk mixture and the beaten whites into the milk and tapioca.

Bake and serve

  1. Pour the mixture into a pudding dish and place it inside a shallow pan of boiling water.

  2. Cover and bake in a moderate oven (350°F/175°C) for about 45 minutes, stirring from the bottom after 10 minutes.

  3. Uncover toward the end if the pudding is not browned enough.

  4. Cool to lukewarm and serve without dressing.

Milk and sugar barely smell alike, yet cooks put them together in 77,875 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens the milk as it soaks and warms, giving the pudding its body.
Eggs
Yolks and whites set the custard and add richness; beaten whites lighten the texture.
Sweet milk
Forms the liquid base that the tapioca thickens and the eggs set.
Sugar
Sweetens the pudding and helps the yolks blend smoothly into the mixture.

The step that matters

Warm the tapioca slowly. Tapioca thickens as its starch swells in warm milk. Heating too fast can scorch the milk on the bottom or leave the starch unevenly cooked, so gentle, frequent stirring keeps the texture smooth.
