What each ingredient does

Fruit
Provides the flavor and the juice that becomes the jelly.
Granulated sugar
Adds sweetness and, once dissolved and boiled, helps the juice thicken into a set jelly.

The step that matters

Stir until the sugar is completely melted. Undissolved sugar crystals can stay gritty in the finished jelly and can settle or scorch on the pan bottom. Stirring constantly keeps the sugar evenly dispersed as the juice heats.
