Ingredients

Directions

Prepare

  1. Break off the ends of the wax beans and snap them into 1-inch pieces.

  2. Wash the beans and drop them into boiling water.

Cook

  1. Cook until tender, about 2 to 2.5 hours for market beans, less for freshly gathered ones.

  2. In a separate bowl, mix cream with flour until smooth.

  3. When beans are nearly done, add the cream mixture and let it come to a boil.

Serve

  1. Serve warm, not hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Wax beans
Provide the main vegetable body and tender texture when cooked through.
Cream
Adds richness and a smooth, creamy coating to the beans.
Flour
Thickens the cream mixture so it clings to the beans instead of thinning out.

The step that matters

Adding the cream mixture. Flour in cream can clump or scorch if added to a hot pot without being smoothed first. Mixing it until smooth and adding it when the beans are nearly done lets it thicken evenly and cook through without curdling or sticking.

Swap the beans

How well each one fits the dish's main ingredients (cream, flour):

  1. Almondfits better
  2. Pistachiofits better
  3. Cashew nutfits better
  4. Beansthe original

Fit is the average pairing score against cream, flour. Candidates are from the same food group and used in at least 100 recipes.
