Why it works: Carrot and turnip match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 8,002 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Corned Beef

Ingredients

Directions

Prepare

  1. Soak the corned beef in cold water for several hours or overnight to remove excess salt.

Simmer

  1. Cover the beef with cold water in a pot and set over moderate heat.

  2. Simmer slowly for 20 minutes per pound, or 4 to 6 hours for a large piece, until tender.

  3. Skim off any foam as it comes to a boil and turn the meat two or three times while cooking.

  4. If desired, add carrots and turnips when the meat is half or two-thirds done, skimming off the grease first.

  5. Add boiling water as needed to maintain liquid in the pot.

Finish

  1. Once cooked, remove the bones, press the meat into a mold, and refrigerate until cold before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corned beef
Is the main protein; long, gentle simmering makes it tender and sliceable.

The step that matters

Simmering slowly rather than boiling hard. A gentle simmer keeps the muscle fibres tender and prevents the meat from toughening and drying out. Skimming foam keeps the broth clear.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, turnip):

  1. Leekfits better
  2. Carrotthe original
  3. Parsnipfits about as well
  4. Chivefits about as well

Fit is the average pairing score against beef, turnip. Candidates are from the same food group and used in at least 100 recipes.
