Ingredients

Directions

Stew the meat

  1. In a pot, place the meat and cover it with boiling water.

  2. Cover closely and stew slowly for 3 to 4 hours until done.

  3. If desired, add sliced onion or carrot halfway through cooking.

Brown and thicken

  1. Once cooked, remove the meat and brown it in its own hot gravy.

  2. Skim off excess grease from the gravy and thicken with browned flour.

Serve

  1. Serve the meat with plain vegetables like mashed potatoes and stewed turnips.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef or mutton
Provides the main body of the dish; long slow stewing makes it tender.
Browned flour
Thickens the gravy so it coats the meat and vegetables.
Onion
Adds savory aroma and sweetness to the gravy as it cooks.
Carrot
Adds subtle sweetness and body to the gravy as it cooks.

The step that matters

Browning the meat in its own hot gravy. Meat that is already cooked needs a hot surface to form browned flavor through the Maillard reaction; if the gravy is not hot enough, the meat will steam rather than brown. Skimming excess grease first keeps the gravy from becoming greasy.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (beef, carrot, flour):

  1. Parsnipfits better
  2. Turnipfits better
  3. Leekfits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, flour. Candidates are from the same food group and used in at least 100 recipes.
