Wild Birds and Other Game
Ingredients
Directions
Rinse the birds in pure cold water and dry with a clean cloth.
If there is any suspicion of spoilage, mix 1 teaspoon of baking soda into 1 quart of cold water.
Wash the birds well with the soda solution, then rinse with cold water, preferably ice water.
Before cooking, remove any shot lodged in the flesh and cut away bruised or discolored parts.
