What each ingredient does

Knuckle of young beef
Provides the main meat, which becomes tender through long, slow simmering.
Browned flour
Thickens the cooking liquid into a gravy.
Onion
Sweetens and deepens the flavor when sautéed until it changes color.
Carrots
Add sweetness and body to the stew as they soften during cooking.
Drippings
Add fat and savory flavor for sautéing the onion.

The step that matters

Simmer until the meat is tender. Connective tissue in a knuckle breaks down only with long, gentle simmering. Boiling hard can toughen the muscle fibers and leave the meat chewy, so keep the liquid at a slow simmer for the full time.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (beef, onion, carrot, flour):

  1. Cuminfits about as well
  2. Celeryfits about as well
  3. Parsleythe original
  4. Turmericfits about as well

Fit is the average pairing score against beef, onion, carrot, flour. Candidates are from the same food group and used in at least 100 recipes.
