What each ingredient does

Calves' feet
Their collagen-rich gelatin sets the liquid into a firm jelly as it cools.
Vinegar
Adds sharpness that balances the rich meat and helps flavour the jelly.

The step that matters

Removing the fat and bones after cooling. Fat left in the liquid stays greasy and cloudy in the finished jelly, and bone fragments spoil the texture. Cooling lets fat solidify on the surface so it can be lifted away cleanly.

Swap the coriander

How well each one fits the dish's main ingredients (vinegar, egg, lemon, parsley):

  1. Tarragonfits better
  2. Dillfits better
  3. Marjoramfits better
  4. Corianderthe original

Fit is the average pairing score against vinegar, egg, lemon, parsley. Candidates are from the same food group and used in at least 100 recipes.
