Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. Mix the castor sugar and flour together.

  3. Thoroughly butter the dariole moulds with melted butter, then dust them with the sugar and flour mixture.

  4. In a bowl, combine the vanilla, cocoa, and baking powder.

  5. Pour the mixture into the prepared moulds, filling them three-quarters full.

  6. Bake for 15 to 20 minutes.

  7. Allow the cakes to cool for a few minutes before turning them out.

  8. Cover each cake with chocolate icing and sprinkle with minced pistachios.

  9. Serve once the icing has set.
