Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Stir the mixture over gentle heat until it thickens, being careful not to burn it.

  2. Pour into a prepared dish and bake at 350°F (175°C) for 30 minutes or until set.

  3. Whip the egg whites with the sugar until stiff.

  4. Pile the whipped egg whites on top of the pudding and return to the oven for a few minutes to set the whites.

  5. Serve hot or cold.
