Chestnut Soup, or Purée of Chestnuts

Ingredients

Directions

Prepare the chestnuts

  1. Peel the chestnuts. Place them in a saucepan with butter over low heat, stirring occasionally until the husks come off easily.

  2. Add enough stock or water to cover the chestnuts and boil gently until tender.

  3. Pound the chestnuts in a mortar and strain through a wire sieve.

Finish the soup

  1. Add brown roux and a few drops of burnt sugar for a brown soup.

  2. Add white roux and cream for a white soup.

  3. Season with salt, pepper, and enough butter to make the purée smooth.

  4. Stir in powdered sugar.

  5. Serve with fried and toasted bread.

What each ingredient does

Chestnuts
Form the main body of the soup as a starchy, thickening purée.
Butter
Adds richness and a smooth, silky mouthfeel to the purée.
Stock or water
Cooks the chestnuts until tender and sets the soup's liquid base.
Brown roux
Thickens the soup and, with burnt sugar, gives it a brown colour.
White roux
Thickens the soup and keeps it pale for a white version.
Cream
Adds fat and softness, rounding the flavour of the white soup.

The step that matters

Pounding and straining the chestnuts. Cooked chestnuts are starchy and grainy; thorough pounding and sieving breaks down the fibres so the purée turns smooth rather than gritty.
