Why it works: Sorrel and nutmeg share more aroma than cooks usually use. They rank in the top 5% of all ingredient pairs, and cooks put them together in 89 recipes. Both carry coumarin, which smells sweet, hay. The science ↓
Sorrel Soup
Ingredients
Directions
Prepare the sorrel
Wash the sorrel thoroughly and drain it.
Place the sorrel in a stew pan and stir with a wooden spoon until it dissolves and boils for 2-3 minutes.
Drain the sorrel on a sieve until the water runs off.
Make the soup
Chop the onion and fry it in a little butter without browning.
Add 2 tablespoons of flour, 1 teaspoon of sugar, a pinch of grated nutmeg, pepper, and salt to the onion.
Add the sorrel and a small quantity of stock or water, then rub the mixture through a wire sieve and serve.

What each ingredient does
- Sorrel
- Provides the soup's main flavour and its tart, acidic character.
- Butter
- Adds fat for richness and carries flavour when the onion is fried.
- Onion
- Builds a savoury base of aroma as it softens in butter.
- Flour
- Thickens the soup, giving it body once the sorrel is added.
The step that matters
Fry the onion without browning. Browning gives the onion a sweet, toasted flavour that competes with the sorrel's bright tartness. Gentle cooking keeps the base pale and clean-tasting, and softens it so it blends smoothly.
