Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Soften and sweeten as they fry, forming the base flavour of the sauce.
Butter
Fat that fries the onions and carries flavour into the sauce.
Vinegar
Adds sharpness; simmering mellows its acidity as it reduces.
Brown roux
Flour and fat cooked together to thicken the sauce.
Fresh mustard
Adds sharp, pungent flavour that rounds out the sauce.

The step that matters

Simmering the vinegar. Vinegar must simmer long enough to lose its harsh sharpness as it reduces. Stopping early leaves the sauce tasting sour and sharp rather than balanced.
