What each ingredient does

Flour
Thickens the milk and soup into a smooth, creamy body when heated.
Butter
Carries the flavor of the vegetables and enriches the soup with fat.
Milk
Adds creaminess and a mild sweetness to the white soup.
Stock
Provides the liquid base and savory depth for the soup.
Onion
Builds aromatic sweetness as it softens in the butter.

The step that matters

Stirring the flour paste into the soup. Flour clumps if added dry or without first being blended smoothly with liquid. Mixing it with a little milk first, then stirring while the soup boils, lets the starch disperse and thicken evenly.
