What each ingredient does

Fish
Protein that firms and turns opaque and flaky as it gently cooks in simmering water.

The step that matters

Keep the water at a simmer, not a rolling boil. Vigorous boiling agitates the water and can break up the delicate flesh, while gentle heat cooks the protein evenly and keeps the fish moist and intact.
