Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked meat
Forms the bulk and savoury body of the cutlet.
Rice
Absorbs liquid and, once cooked and cooled, helps the mixture hold its shape.
Breadcrumbs
Absorb moisture and help bind the mixture, and form a crisp coating when fried.
Onion
Adds aroma and mild sweetness as it cooks into the mixture.

The step that matters

Frying in very hot deep fat. Very hot fat sets and browns the breadcrumb coating quickly, so the crust turns crisp before the cutlet absorbs much grease or falls apart.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (meat, onion, rice, parsley, pepper):

  1. Thymefits better
