Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Macaroni
Forms the bulk of the filling and gives the croquettes their body.
Butter
Fat that enriches the flavour and carries the flour to make the base.
Flour
Thickens the stock into a binding sauce that holds the filling together.
Stock or water
Liquid that hydrates the flour and turns the base into a thick sauce.
Parmesan cheese
Adds savoury, salty flavour and helps the filling bind when stirred in.
Cooked ham
Contributes meaty, savoury flavour to the filling.

The step that matters

Let the mixture cool completely before shaping. A warm, loose filling cannot hold its shape and may burst or spread in the hot fat. Cooling lets the starch-thickened sauce set firm enough to form and coat cleanly.

Swap the mustard

The recipe marks mustard as optional. How well each one fits the dish's main ingredients (ham, parmesan cheese, butter, flour, pepper):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Mustardthe original

Fit is the average pairing score against ham, parmesan cheese, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
