  3. Stir until boiling, then simmer gently for about 20 minutes.

  4. Rub the mixture through a sieve and return it to the saucepan.

  5. Mix the cornflour with a little cold water to form a paste and add it to the sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Provide the main body and tomato flavour of the sauce.
Butter
Adds richness and carries flavour when frying the onion.
Cornflour
Thickens the sauce as it is heated with the liquid.
Onion
Builds a savoury base of flavour when fried in butter.

The step that matters

Adding the cornflour paste. Cornflour must be mixed smooth with cold water before it goes in, then the sauce must be brought to a boil. Starch added dry or to hot liquid clumps, and it only thickens fully once it reaches a boil.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (tomato, butter, sugar):

  1. Capsicumbetter flavor fit
  2. Potatobetter flavor fit
  3. Sweet potatobetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, butter, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
