What each ingredient does

Rice
Swells as it simmers in milk, forming a thick, tender base that holds the balls together.
Milk
Cooks the rice to tenderness and makes the mixture creamy and moist.
Castor sugar
Sweetens the filling and helps the croquettes brown when fried.
Egg
Binds the breadcrumb coating so it sticks and seals the outside.
Breadcrumbs
Form a crisp, golden coating that browns in the hot fat.

The step that matters

Cooling the rice mixture before shaping. Warm rice is soft and sticky, so it is hard to shape and may fall apart. Cooling lets the starch firm up so the balls hold their form through coating and frying.
