Why it works: Cheese and butter are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 7,962 recipes. Both carry delta-dodecalactone, which smells sweet, creamy. The science ↓
Cheese Straws
Ingredients
Directions
The book says “a rather slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Make the dough
Sift the flour into a bowl and add salt and cayenne.
Rub in the butter until well combined.
Add the grated cheese and mix into a stiff paste with the egg yolk and a little water.
Shape and bake
Roll out the dough thinly and cut into strips.
Cut out some rings and bake all in a 300°F (150°C) oven until crisp and very pale brown.
Thread the straws through the rings and serve on lace paper.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

The flavor team
The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Flour
- Forms the structure that holds the dough together as it bakes.
- Butter
- Adds fat that makes the dough short and crisp rather than tough.
- Grated cheese
- Adds savoury flavour and fat, and helps the dough bind into a paste.
- Egg yolk
- Binds the dough and adds richness for a firm, crisp texture.
The step that matters
Baking until crisp and only very pale brown. Low oven heat dries the strips slowly so they turn crisp. Baking too hot or too long browns the cheese and can make the straws bitter or hard.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
