On Stock, and Clear Soups

Ingredients

Directions

  1. Cover the meat with cold water in a pot.

  2. Bring the water to a boil slowly, skimming off any foam that forms.

  3. Add the vegetables, bouquet of herbs, spices, sugar, sauce, and ketchup.

  4. Simmer for three hours, skimming fat as needed.

  5. Strain the broth into a basin and let it cool to remove any remaining fat.

  6. Warm the clear broth before serving with macaroni, bread sippets, or vegetables.
