What each ingredient does

Bread
Provides a crisp, golden base that holds the toppings.
Butter
Frying the bread adds browning and a rich, savoury flavour.
Prawn meat
Forms the main savoury filling, giving the canapés their substance and flavour.
Mayonnaise sauce
Adds fat and creaminess, moistening the topping and softening its flavours.

The step that matters

Frying the bread until pale golden. Frying gives the bread a crisp, sturdy surface so it does not go soft under the wet topping. Cooling it fully before spreading also keeps the butter and filling from melting and sliding off.
