Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Fry the bread

  1. Fry the large round of bread in the melted fat until golden yellow and soaked with fat.

  2. Remove the bread and place it on a flat dish.

Top and bake

  1. Cover the bread with chopped kidney meat and pour remaining melted fat over it.

  2. Divide into portions and place in the oven at 400°F (200°C) until crisp.

Serve

  1. Serve immediately with mustard, Nepaul pepper, and coarse sea salt on hot plates.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large round of bread
Forms the base that soaks up fat and crisps into a sturdy toast.
Fat from kidney meat
Frying fat that browns the bread and carries rich flavour into it.
Chopped pieces of kidney meat
Forms the savoury topping that gives the toasts their main substance.

The step that matters

Bake until crisp. The bread must be fully crisp after baking; if it stays soft, the fat-soaked base turns greasy and soggy. Dividing into portions helps the heat reach each piece evenly.

Swap the mustard

How well each one fits the dish's main ingredients (bread, meat, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Asparagusfits about as well
  4. Mustardthe original

Fit is the average pairing score against bread, meat, pepper. Candidates are from the same food group and used in at least 100 recipes.
