Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the grated cheese, butter, mustard, salt, Nepaul pepper, and egg yolks until smooth.

  3. Toast the bread slices carefully and butter them on both sides.

Bake and serve

  1. Place the buttered bread on an oven-safe dish and spread the cheese mixture thickly over the top.

  2. Bake in the oven for 10 minutes until golden and bubbly.

What each ingredient does

Fresh cheese
Melts into the sauce and provides the main rich flavour and creamy body.
Egg yolks
Emulsify with the butter and cheese and help the topping set into a custard-like texture.
Butter
Adds fat for smooth texture and helps the topping brown evenly.
Prepared mustard
Adds sharp, tangy flavour that balances the richness of the cheese.

The step that matters

Baking the cheese topping. Egg yolks set when heated, so the topping must bake only until golden and bubbly. Overbaking can make the yolks curdle and turn the topping grainy or dry.
