What each ingredient does

Coriander seed
Forms the bulk of the blend and gives its warm, citrusy base flavour.
Turmeric root
Provides the yellow colour and an earthy, slightly bitter note.
Cumin seed
Adds a warm, aromatic flavour that defines the blend's character.
Dried chilli skin
Adds heat from capsaicin, which gives the powder its spiciness.

The step that matters

Roasting the coriander seed and fenugreek. Roasting releases aromatic oils that give the blend depth, but seeds scorch quickly. Burnt seeds turn bitter and can spoil the whole batch, so roast gently and stop as soon as they smell fragrant.

Swap the coriander

How well each one fits the dish's main ingredients (turmeric, butter):

  1. Cardamomfits better
  2. Cuminfits better

Fit is the average pairing score against turmeric, butter. Candidates are from the same food group and used in at least 100 recipes.
