What each ingredient does

Espagnole sauce
Forms the thick brown sauce base that carries all the other flavours.
Red currant jelly
Adds sweetness and a gloss that balances the sharp vinegars.
Anchovy vinegar
Adds acidity and a deep savoury note to the sauce.
Madeira
Adds a fortified wine aroma and richness to the sauce.
Black leicestershire mushrooms
Adds earthy flavour and a soft, meaty texture to the finished sauce.
Carrot
Adds sweetness and body to the flavour base as it simmers.

The step that matters

Boil again until thickened to the consistency of cream. The sauce reduces by evaporation, concentrating flavour and thickening it. Cooking too briefly leaves it thin, while overcooking makes it salty and heavy, so check the texture against cream.
