Cylinders of Parmesan with Prawn Salpicon

Ingredients

Directions

  1. In a bowl, mix grated Parmesan, butter, pepper, coarse sea salt, egg yolks, and spiced pepper.

  2. Pass the mixture through a sieve and form it into a paste on a floured surface, about 1 inch thick.

  3. Once cold, cut the paste into cylinders, 2 inches long and 1½ inches in diameter.

  4. Coat the cylinders in egg and bread crumbs, then fry in butter until golden yellow.

  5. Let them cool, then cut off one end and scoop out the interior.

  6. Fill each cylinder with prawn salpicon diluted with veloute sauce and seal with egg white.

  7. Heat in the oven and serve on a napkin.
