Chaud-froid a LA Belle Alliance

Ingredients

Directions

  1. Lightly roast the fowl and let it cool.

  2. Cut fillets from the fowl to fit the fonds d’artichauts.

  3. Make a puree with the scraps of meat and pounded mushroom.

  4. Slice the cold boiled tongue into rounds matching the number of fillets.

  5. Prepare a veloute sauce using the bones and skin, reducing it as needed.

  6. Moisten the puree with a little veloute sauce and fill the fonds.

  7. Layer the tongue slices and more puree on top, then place the fillets.

  8. Cover the entire dish with thick chaud-froid sauce and let it cool.

  9. Trim neatly, set on a napkin, and garnish each with a piece of truffle.
