Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the body of the soup, releasing their flavour and thickening it as they soften and break down.
Shallots
Add a mild, sweet aromatic base that rounds out the savoury stock.
Garlic
Adds pungent aromatic depth that mellows during long simmering.
Strong stock
Supplies the main liquid and savoury backbone of the soup.

The step that matters

Cook until the mushrooms are soft enough to pass through a sieve. Mushrooms must soften fully so their cell walls break down; undercooked pieces will not pass smoothly and leave a gritty, uneven texture.

Swap the mace
