Lamb Cutlets

Ingredients

Directions

  1. Trim the lamb cutlets neatly and beat them thin.

  2. Dip the cutlets in egg and bread crumbs, then fry in ghee until golden brown.

  3. Drain excess fat from the cutlets.

  4. Mash the potatoes and place them in a well-buttered deep-border mold.

  5. Bake the potatoes in the oven for a few minutes, then turn them out onto a round dish.

  6. Fill the center with thick spinach puree and arrange the cutlets around it.

  7. Garnish with parsley and tomatoes, and serve with tomato sauce in a sauceboat.
