What each ingredient does

Fore-rib of beef
Provides the main cut whose fat and connective tissue shape flavour and tenderness during roasting.
Clarified dripping
Adds fat that coats the surface, promoting browning and keeping the meat moist when basted.

The step that matters

Roast steadily after the initial heat. Drawing the joint back from the fire lets heat reach the centre gently, so the interior cooks evenly while the surface browns without scorching. Frequent basting keeps the outside moist and golden.

Swap the radish

How well each one fits the dish's main ingredients (beef, horse, sauce):

  1. Mustardfits better
  2. Tomatofits about as well
  3. Onionfits about as well
  4. Radishthe original

Fit is the average pairing score against beef, horse, sauce. Candidates are from the same food group and used in at least 100 recipes.
