Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the starchy, floury bulk that forms the bulk of the stuffing.
Egg yolks
Bind the stuffing together so it holds its shape when cooked.
Bread-crumbs
Absorb moisture and give the stuffing a soft, cohesive texture.
Butter
Adds richness and moisture to the stuffing and helps the surface brown.

The step that matters

Brush the capon with beaten egg, dredge with bread-crumbs and brown it.. The egg and crumb coating only browns well if the surface is dry enough and the bird is hot enough; too little heat leaves it pale and soggy.
