Meat Pies and Puddings

Ingredients

Directions

  1. Make a well in the center of the flour.

  2. Add the yolk of egg, salt, butter, and a little water.

  3. Gradually mix in the flour using your fingers, rubbing the butter into the flour.

  4. Add more water as needed until the mixture is smooth and elastic.

  5. Sprinkle the paste with a little water and work it on a surface for a few minutes.

  6. Flatten the remaining butter and place it on the rolled-out paste.

  7. Fold the sides of the paste over the butter to cover it completely.

  8. Dust the surface with flour and shape the paste into a square about 10 inches on each side.

  9. Let it cool for about 10 minutes, using ice if it's hot.

  10. Roll the paste out to about 2 feet long and 10 inches wide, keeping the edges square.

  11. Fold the paste into thirds, turn it half round, and roll it out again.
