What each ingredient does

Elderberries
Provide the fruit juice and flavour that form the wine's base.
Sugar
Sweetens the liquid and feeds the yeast during fermentation.
Cream of tartar
Adds acidity to the liquid, which helps keep the wine stable and bright.
